Oh the grinding time! You don't get much ink for the effort that goes in, and it's fiddly and temperamental. I recommend spending your first 20-50 hours learning to use the brush, not learning how to make ink. Sumi-e is going to be different from shodo, and I think you'll be able to get away with a much more dilute ink than for writing.
